Tomato Soup with Rice

One passion of mine has been cooking. I learned when I was little from my mother and throughout the years I have made up some tasty dishes and some that I wish I could forget. I had hopes of including recipes on this blog so this blogathon post will be start of it :) I plan on adding quite a few more! One dish I love to make that is quick and easy is tomato soup with rice. It doesn’t cost much to make it, it’s filling, and it’s nice to eat on a cold day or a lazy one.

Ingredients:

  • 1 can tomato soup (I use Campbells)
  • 1 package of instant white rice (I use Uncle Ben’s Ready Rice that is microwavable, or you can fix your own rice for this)
  • 1 cup of shredded cheddar cheese
  • 1 handful of croutons (I prefer garlic)
  • Seasonings needed are salt, pepper, garlic salt, and parsley flakes.

I first begin by cooking the tomato soup as directed. Campbell’s tomato soup calls for 1 can of water but I usually use 1/2 can of water or milk so it’s not too thin of a soup, but it’s all up to you and how you prefer your soups. Bring this to a boil. Next start cooking the rice, (read the directions on the package) and since I use the Uncle Ben’s microwavable rice (which is very tasty!) it only takes about 90 seconds in the microwave. Season the tomato soup with salt, pepper, garlic salt, and parsley (to taste). Next add in the cooked rice and stir. I let it reach a slight boil again and then remove it from the stove.

Pour desired amount into a bowl. I sprinkle the cheddar cheese and croutons on top and sprinkle a few more parsley flakes on top as well. Try adding other things into the dish as well :D! If anyone makes this or a variation of it please let me know and share pictures if you have them.

    Sounds delicious. I never thought of adding rice to soup.

  2. I’m with Millie…never thought of adding rice to tomato soup. This comes in handy for a quick, meatless lunch in the fall/winter (my mild-to-moderate OCD won’t let me eat soup in the summer)!
